Street vendors navigated the watchful eyes of the "Teh Gu" (Sanitary Enforcement Officers). His nickname, "Janggut"—meaning 'beard'— is a curious reference to the mole with long hair on his chin that Erica and many others remember so clearly!

This piece celebrates the ingenuity behind Katong Laksa's unique "shortcut" style, where noodles were famously snipped to allow for quick consumption should an enforcement officer appear—a signature touch that became the brand's enduring trademark.
